Kinetic Study of Acid Hydrolyzate of Dextran

Abstract

The kinetics of acid hydrolysis of dextran, produced by Leuconostoc mesenteroides isolated from Sikhae, a Korean fermented fish product, was studied. Hydrolysis reactions were carried out at various temperatures between 50 and 80¡É. A simple first-order reaction model was used for dextran hydrolysis reaction. Kinetic parameters were evaluated for three different hydrochloric acid concentrations (0.01, 0.1, and 1N). Activation energy, 25Kcal/mol, remained constant regardless of these reaction conditions. Acid concentration was more effective than time of acid treatment for the molecular weight reduction.
